Pumpkin Cake

Yourhealthy treat!

Ingredients

  • 1.5 cups white flour
  • ¼ cup whole wheat flour
  • ¼ cup oatmeal
  • 2 medium apples (grated) ( or 2 persimmons)
  • 1 cup of steamed mashed pumpkin
  • ½ of grated raw carrots
  • 1/3 cup sugar
  • 2 whole eggs
  • 1 eggwhite
  • ½ cup oil canola oil
  • 2 tablespoons pumpkin seeds
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon grated ginger
  • 2 teaspoons of baking powder

 

Mix the sugar eggs and oil together until creamy.

Add pumpkin, carrots and the apples.

Add spices, flours and blend well for 2 minutes, and finally baking powder.

Finally sprinkle pumpkin seeds.

Add the mixture to a none sticking tray to preheated oven at 200 °C. Bake for around 45 minutes.
