- 1.5 cups white flour
- ¼ cup whole wheat flour
- ¼ cup oatmeal
- 2 medium apples (grated) ( or 2 persimmons)
- 1 cup of steamed mashed pumpkin
- ½ of grated raw carrots
- 1/3 cup sugar
- 2 whole eggs
- 1 eggwhite
- ½ cup oil canola oil
- 2 tablespoons pumpkin seeds
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon grated ginger
- 2 teaspoons of baking powder
Mix the sugar eggs and oil together until creamy.
Add pumpkin, carrots and the apples.
Add spices, flours and blend well for 2 minutes, and finally baking powder.
Finally sprinkle pumpkin seeds.
Add the mixture to a none sticking tray to preheated oven at 200 °C. Bake for around 45 minutes.
